Good point to bring up. The underlying reason comes down to how each protocol handles the actual data transfer. Bluetooth HID over GATT is built around connection intervals – the device and your receiver only talk to each other at fixed scheduled moments, so there’s inherent waiting built in before your input even gets processed. That’s why you feel that mushiness. A 2.4GHz dongle is basically a purpose-built radio that sends your movement data instantly on demand with a 1ms polling loop, giving you that sub-millisecond feel. On top of that, quality dongle mice use frequency hopping spread spectrum with adaptive frequency hopping, which is the key to why they survive a Wi-Fi crowded room. They actively listen for energy above about -70dBm on their current channels and hop away within a couple milliseconds before the interference can actually bite you. Bluetooth shares that same 2.4GHz ISM band with your Wi-Fi on channels 1, 6, and 11 so it doesn’t have that same aggressive avoidance built in. For a LAN event or competitive play the difference is real and worth it, but if you’re just playing casually and your room isn’t packed with routers, a decent Bluetooth mouse won’t ruin your experience.
